One thing I absolutely enjoy is cooking a good meal. My kids will tell you they never lack for something to eat around here. Here are two of our favorites, that even my pickiest child will eat.
Barbecue Pork
2-4 lbs. of pork ribs or pork loin pieces
Salt
Barbecue Sauce of your choice (I use Jack Daniel's original)
Salt Pork pieces well
Place in crock pot with half bottle of sauce. Cook on low for 4 hours. Add the rest of the sauce and break apart the pork. Continue to cook until dinnertime. If you aren't home to to do the second step, don't worry about it. I've let it cook for 8-9 hours, then added the rest of the sauce at the end, and it still turns out fine.
I serve on whole wheat buns, and a side salad or potato salad. Enjoy!
Corn-Rice Casserole
Revised from a recipe my friend Joanna gave to me
2 cans mexicorn
1 pkg yellow rice (Zataran's)
1 stick margarine or butter
1 can cream of celery or cream of chicken soup
1 cup sharp cheddar cheese
2 cups chopped chicken (this is what I added from the original recipe)
Cook rice according to directions. Stir in margarine until it melts. Add drained corn and soup. Stir in cheese. Bake 30 minutes on 350. Place more cheese on top and bake additional 5 min.
I have also made variations of this recipe, like adding some salsa or a can of diced tomatoes to the casserole. Also, if I couldn't find the yellow rice, I've used Spanish rice for something different.
I had to add a recipe, as I just made this one today, and it was yummy!
Sausage Rice Casserole (my own creation)
1 1 lb. sausage Kielbasa, cut in bite sized pieces
1 can mexicorn
1 box yellow rice
1 large can diced tomatoes
1 cup Sharp cheddar cheese
Cook rice according to directions. Saute Kielbasa on stove until hot. Mix rice, sausage, drained corn, diced tomatoes, and top with cheese. Bake 20 minutes in 375 oven, uncovered. Yummo, as Rachel Ray says!

MMMMMMM, sounds yummy! I make both of these, all the time. And for the chicken, corn and rice one, I add black beans too. Scoop it up with Lime Tostitos and I'm in HEAVEN :)
